This is a quick and easy way to prepare sweet potatoes, and very delicious.
2 sweet potatoes 2 tsp. butter or margarine 1/3 cup milk 1/4 tsp. cinnamon 1/4 cup nutmeg dash ginger
Wrap sweet potatoes in aluminum foil, pierce and bake for one hour at 400 degrees F. Let potato cool. Cut in half, remove pulp, save skins. Mix pulp with milk, cinnamon, nutmeg and ginger. Add butter or margarine. Beat with mixture until smooth. Spoon pulp into shells and bake for 10-15 minutes at 350 degrees. Serves 4. Variation: Add one tsp. honey, and omit milk.
