Italian Mashed Potatoes

These are very yummy, simple to make, and perfect for special occasions or pot luck dinners. You can easily adjust the amount, and you may use either instant potatoes, or home-made potatoes for this recipe. This is a perfect dish to make with your children. Sarah and I made them with Instant potatoes.

Italian Mashed Potatoes

4 cups instant potatoes
1 stick butter
2 cups half and half
2 cups water
1 ½ cups shredded mozzarella cheese
1 ¼ cups grated parmesan reggiano cheese
¼ cup Italian seasoned breadcrumbs

Preheat the oven to 400 degrees F

Prepare a large, approx. 2 ½ quart casserole dish with butter, if necessary

Mix together instant potatoes, butter, half and half, and microwave for 3-4 minutes on high. (You may substitute home-made mashed potatoes for the instant, just prepare them with half-and-half and butter and skip the water).

Stir in the mozzarella and 1 cup of the parmesan cheese (don't skimp on the parmesan, use parmesan reggiano, not that stuff in the can).

Mix the breadcrumbs and the last ¼ cup of parmesan cheese and sprinkle over the top of the casserole.

Bake at 400 degrees F for 15-20 minutes or until the topping is golden brown.

Green Bean Casserole

This is a common recipe for the holidays, but it is often made with cream of mushroom soup, and french fried onions. The french fried onions get gross when they are re-heated, and my kids don't like them. Cream of mushroom soup gets really old, as well. My husband says that all those recipes made with cream of mushroom soup taste the same. So this is my version of this casserole.

Easy Green Bean Casserole
  • 1 can condensed cream of chicken with herbs soup
  • 1/2 cup milk
  • 2 cans cut green beans
  • 1 cup Italian seasoned bread crumbs

Preheat oven to 350 degrees F
mix soup and milk in a casserole dish until creamy
add green beans and mix well
sprinkle bread crumbs to cover the top of the casserole
bake for 15-20 mins, until hot and bubbly

Easy Cheesy Chicken Tenders

I think all children love chicken tenders. Unfortunately, not all grown-ups share the same fondness for them. Perhaps part of the reason is that we have all had bland frozen tenders or weird ones from fast food places, that don’t really resemble chicken at all.

These tenders are yummy, and easy to make. They start with frozen chicken tenderloins that are high quality, and inexpensive at most grocery or warehouse stores. Then they are soaked in buttermilk, which makes them tender and juicy. Finally, the addition of parmesan cheese makes them suitable for special occasions.

Parmesan Encrusted Chicken Tenderloins
  • 1 cup buttermilk
  • ¼ teaspoon dried minced garlic (optional)
  • 1 ½ pounds chicken tenderloins
  • 1 cup Italian seasoned bread crumbs
  • 1 cup grated parmesan reggiano cheese
  • Salt and pepper to taste
  • Sprinkle of olive oil

Mix buttermilk and garlic in a large bowl with a lid.
Add the chicken tenders and stir to make sure they are well coated. Add more buttermilk, if needed.
Cover, and place in the refrigerator for at least 30 minutes. You can do this the night before, or in the morning if you want.
When ready to bake, preheat the oven to 400 degrees F.
Prepare a baking sheet with non-stick foil, or whatever method you prefer for non-stick ease.
Mix the breadcrumbs, cheese, salt, and pepper in a shallow dish
Dredge the chicken in the breadcrumb mixture. The buttermilk will help the coating stick.
Sprinkle olive oil over the tenders to add extra crunchy goodness.
Bake the tenders for about 15 minutes, or until they are golden brown and crispy.

Easy Chili

Ok, let me say this right away. This is not my mother's chili. It's certainly not gourmet, or even authentic chili. This is easy chili that you can make in about 15 minutes, and the kids will eat without picking out half the ingredients. It's also very tasty! If you have children that are not afraid of chunks of tomatoes, peppers and other goodies, feel free to throw them in.

I believe in cooking with what I have on hand and what my family will eat. Everyone that knows me says that I never make anything the same way, twice. That is partly because I don't measure ingredients (unless I'm baking, of course) and I tend to experiment. This is also an easy recipe that the kids can make.

Quick and Easy Chili for Kids
  • 1 lb. ground beef
  • 1 small minced onion
  • 1 can mild chili beans
  • 1 can tomato soup
  • 1 T. ground chili powder
  • salt and pepper to taste

Brown ground beef and onions in a large skillet.
Add chili beans, tomato soup, chili powder, salt and pepper to the skillet.
Cover and simmer for 15 minutes.

Serve with garlic bread, cornbread, or your favorite side dish.
