Banana Nut Bread

This is a really simple recipe that is great for the kids to create. I make this whenever we have really ripe bananas at home.

1/2 cup shortening
1/2 cup sugar
2 eggs
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 medium mashed ripe bananas
1/2 cup chopped pecans

This is super easy with a hand or stand mixer.
Pre-heat oven to 350 degrees F
In a large bowl, mix the shortening and sugar until nice and creamy
Add eggs and beat together for a minute or so

In another bowl combine the flour, baking powder, baking soda, and salt
Slowly add the flour mixture and the banana to the batter and stir together
Mix in the nuts and pour into a greased and floured loaf pan
Bake for about 45 minutes
Let cool before serving - the kids will love it.

I used your recipe to make banana nut muffins and it was fantastic. I love it to the max!! The muffins were light and fluffy and not overly sweet.

Some minor adjustments:
I added 1 tsp of vanilla essence to make it more fragrant and 1 tbsp of mayonnaise to neutralize the baking soda. (can use plain yogurt/sour cream if u're grossed out by the idea of using mayonnaise)
