Baked Tortellini

1 lb. fresh or frozen cheese tortellini
1 jar of your favorite spaghetti sauce
(or use your own sauce if you have it)
1/4 grated parmesan reggiano cheese
(buy fresh, it's so much better than the canned stuff)
4 ounces shredded mozzarella cheese
2 ounces sliced pepperoni

Preheat oven to 325 degrees F.
Boil the tortellini for about 2 minutes.
Pour drained tortellini into baking dish.
Stir in spaghetti sauce
Season with your favorite Italian seasonings (garlic, onion, basil, oregano)
sprinkle with parmesan reggiano cheese
layer the top with mozzarella cheese and pepperoni
Cover and bake for about 15-20 minutes, until the cheese is melted and the sauce is heated through.

I made this for the kids last night and they loved it! This recipe is quick, easy, and yummy, too!

Easy Italian Meatloaf

My children love meatloaf, and I make it different every time. A lot of people think meatloaf is boring, but it can be both tasty and fun, if you experiment with various ingredients in your cupboard. Try adding different herbs, spices, and cheeses for variety.

Italian Style Meatloaf
2 lb. meatloaf mix (best with beef, pork, veal mix)
1-1/2 cups italian seasoned bread crumbs
2 eggs
1/2 cup of your favorite spaghetti sauce
1/4 cup red wine
1 teaspoon minced garlic

Preheat oven to 350°.
In large bowl, combine all ingredients.
Shape into meatloaf pan.
Bake 1 hour or until done. Makes about 8 servings.

Salmon Burgers

I made these last night and the kids loved them! This might also work with tuna, different varieties of bread crumbs, your favorite cheeses, or herbs. If you like fish, experiment with this basic recipe and have fun!

Salmon Burgers

1 large can salmon, drained, and flaked
2 eggs
½-cup Italian seasoned bread crumbs
½-cup grated parmesan reggiano cheese
1 small chopped onion
1 clove finely shopped garlic
Salt and pepper to taste
1-tablespoon Worcestershire sauce
2 tablespoons olive oil

Mix all ingredients together to form patties.
Don’t be afraid to experiment with your favorite herbs, spices, and other ingredients in your kitchen.
Place in a preheated skillet with 2T of olive oil.
Cook each side for about 4 minutes to heat through, and brown the outside.
Don’t mess with the patties while cooking; let the first side brown nicely before flipping.

Makes 4-6 good sized patties.

Marinara Chicken for Kids

1 pack of chicken patties (freezer section of grocery store)usually 6 in a pack
1 can of marinara sauce
1 package of Shredded Mozzarella Cheese

Pre-Heat oven 375 degrees
Place frozen patties in 9x11 inch glass baking dish
Pour marinara sauce over top of patties
Spread mozzarella cheese over top of sauce (the more the better)
Place in oven
Cook for 20-25 min or until cheese is melted (a little golden on top)

Serve and Eat with any sides
