Memorial Day Recipes

The memorial day weekend is the official kick-off of summer in the Cleveland area, and it is generally filled with barbeques, and pot luck picnics. One of the most common questions I hear is, What can I bring to the picnic?"

These are my suggestions for delicious, easy recipes that work well at picnics. Please feel free to share your own ideas, too.

Macaroni and Cheese
This is one of the staples of any picnic. This recipe is easy to make and it is much better than the cheap blue box stuff. This is also a nice alternative for those that do not eat meat.

Easy Pasta Salad
Pasta salads are quick and easy to make and hold up well at parties. This recipe makes an attractive dish for pot lucks. Make sure you always have a box of pretty pasta on hand, and experiment with the ingredients you have available.

Easy Chili
If you have a place to plug something in, bring this chili in a crock pot and they will love you forever.

Sun Tea
Every cookout needs a refreshing beverage other than beer and soda. The Idea Queen offers wonderful ideas for making this tasty summer beverage!

Easy Tuna Casserole

This is probably one of the easiest dinners to make, and I think it is really tasty, too. Have fun with this and experiment with various ingredients in your pantry. This is a simple dish to make with the kids.

8 oz egg noodles, prepared according to package directions
2 6oz. cans solid white albacore tuna, drained
1 10oz. can condensed cream of mushroom soup
1 cup half-n-half or whole milk
1 small can sweet peas, drained
1 small chopped onion (or use dry minced onion to taste)
Salt and pepper to taste
1/2 cup panko bread crumbs (you may substitute your favorite topping)
2T melted butter

Pour everything except the breadcrumbs and butter into a casserole dish

Mix the breadcrumbs and butter to make a nice crumbly topping

Bake at 350 degrees F for about 15-20 minutes until the topping is lightly brown and the casserole is warm.
