Falafel with Tahini and Green Beans

These were really yummy. Our family are newly vegetarian, so I am trying to discover new meal ideas, and new recipes. These falafel came from a really simple mix. All I had to do was add water and form into patties. The Tahini was canned, but I added some dill, garlic, and onion to spice it up a bit. The green beans were also canned. This was a quick and easy Vegan meal.

Easy Veggie Chili

This is super easy to make and very tasty. The kids enjoyed it, and they did not mind at all that it was vegetarian.

1 pkg Yves Veggie Ground Round
1 can Chili Beans (We like Bush's Chili beans)
1 teas. Cumin
1 teas. Chili Powder
1 small chopped onion (or use dry if you are in a hurry)
1 can tomato sauce or tomato soup

Mix everything together in a pan and heat for about 15 minutes, and voila, you have a simple Veggie Chili. Feel free to add other ingredients or adjust the heat, to taste.
