Cavatelli with Scallops and Mushrooms

This was something I threw together last night and everyone went wild over it. It took no time at all to make and it was simply decadent.

1T Olive Oil
1 lb Sea Scallops
Garlic and Onion to Taste
1/2 Cup White Wine
3T Butter
8 oz Crimini Mushrooms (baby bella)
1lb Frozen Cavatelli
1 Can Cream of Mushroom Soup
1 Can Half-n-Half
Salt, Pepper, and Italian Seasonings to Taste
Parmigiano Reggiano Cheese

I just bought a pound of colossal wild sea scallops and sauteed them in olive oil with garlic and onion.

Then I heated some frozen cavatelli (you can use any pasta).

While the pasta is cooking, I deglazed the pan with white wine (Use your favorite wine).

Then I added butter and mushrooms to the pan and stirred them around. The pre-sliced baby bellas at the grocery store are so tasty and easy to use.

Next, I stirred in the soup and half-n-half and then ladled the cavatelli into the sauce (the starch from the pasta water thickens the sauce a bit).

Finally, I topped this with shredded parmigiano reggiano cheese and Freshly ground pepper.

Meatless Labor Day

The Labor Day Weekend marks the end of Summer in Northeastern Ohio, and it's one of those official days to break out the grill and have a party. Whether you are a meat eater or a vegetarian, it's very simple to offer vegetarian food at your cookout.

There are fantastic hamburger alternatives available, and our family loves Boca Burgers. They are delicious and healthy, and they don't have the fat and cholesterol of beef burgers. Meatless burgers are tasty, healthy choice for anyone so feel free to offer them to your meat eating friends, too.

If you are a vegetarian planning to attend a BBQ hosted by meat eaters, you can just bring along a few veggie burgers and ask them to be placed on the grill before the meat, or cooked in the microwave.

I am personally not as excited by the meatless hotdogs, but there are many different brands of meatless bratwurst and smoked sausages that taste pretty good. Both Boca and Morningstar Farms have verious sausages to choose from.

Easy Vegetarian Chili
If you have a place to plug something in, bring this chili in a crock pot and they will love you forever.

Pasta salads are quick and easy to make and hold up well at parties. This recipe makes an attractive dish for any BBQ. Make sure you always have a box of pretty pasta on hand, and experiment with the ingredients you have available.

Tossed Salad
A nice, big tossed salad is a must at any party. With the abundance of pre-washed, pre-mised bagged salads available at the grocery store, as well as many pre-washed and pre-cut veggies, this is a really great last minute choice. Buy a few bags of your favorite veggies and toss them together in a bring bowl, then bring along a few favorite dressings, and voila' you have a tasty dish that everyone will appreciate.
