Vegetarian Stroganoff

I made this for dinner tonight and it was fantastic. I'm having so much fun converting traditional meat recipes to meatless ones!

The following is the recipe I created to make this dish. Feel free to experiment, and please let me know what you think if you try this.

1 tablespoon olive oil
1/2 of a medium sweet onion, chopped
Chopped garlic to taste
8 ounces of Sliced baby bella (crimini) mushrooms
1 can condensed Cream of Mushroom soup
1 soup can of plain soy milk
1 package Onion Mushroom soup mix
1/2 cup water
8 ounce package of Morningstar Farms® Meal Starters™ Steak Strips
1 tablespoon vegan sour cream

Lightly saute the onions and mushrooms in the olive oil
Add garlic as desired
Slowly stir in soup, soup mix, milk, and water
Stir in entire package of veggie steak strips
Simmer over low heat until warm
Stir in sour cream right before serving
Serve over warm brown rice, spaetzle, or noodles
