Vegetable Soup

This is one of the easiest vegetarian dishes you can make. Basically you throw your favorite chopped veggies in a pot or slow cooker and simmer until everything is as tender as you like it.

For this batch I used the following:

1 tablespoon of extra virgin olive oil
1 small chopped onion
2 cloves of chopped garlic
1 cup chopped celery
1 box of organic vegetable broth
1 vegan "beef" flavor bouillon cube
2 cups of water
1 can of tomato paste
3 potatoes
2 carrots
1 yellow summer squash
1 can of green beans
1 cup of black beans

I just chopped all the veggies, threw them in a pan and simmered them for an hour or so. It was amazing. Pick the vegetables that you and your family enjoy most and have fun experimenting.
