Grilled Tofu Sandwiches

Tofu is one of my favorite foods, but it's not always easy to get the kids excited about it. One of my favorite quick sandwiches is a grilled tofu sandwich, made just like a grilled cheese.

For each sandwich you need:

2 slices of bread
2 thin slices of extra firm tofu
1 slice of your favorite cheese (there are many great vegan cheeses)
salt, pepper, and spices to taste
mustard (optional)

Slice your tofu into 1/4 inch thick slices and drain or press with a napkin or paper towel.

Heat a small griddle or frying pan and add a touch of olive oil.

Once the oil is warm, add the tofu and season as desired. I love using salt, pepper, and curry powder, but you can have fun experimenting.

Heat the tofu for a minute or two on each side, you can let it get a little brown, too.

Butter one side of your bread and assemble the sandwiches like you are making a grilled cheese. We like to use mustard in our sandwiches.

Grill until toasty on the outside and serve.
