This is how I won over the meat eaters in my family. Vegan burgers taste amazing. They are also high in fiber and low in fat. Several of my non-vegan friends eat these all the time because they are low in calories and only one point or something on Weight Watchers.

We like Gardenburger Flame Grilled or Morningstar Grillers Vegan. You can top your veggie burgers with your favorite toppings like ketchup, mustard, onions, lettuce, tomato, pickles, etc. If you love mayo, try Veganaise similar to Hellmann's) or Nayonaise (similar to Miracle Whip). There are also plenty of vegan cheeses available, too. We like Yves vegan cheeses.

Vegetable Soup

This is one of the easiest vegetarian dishes you can make. Basically you throw your favorite chopped veggies in a pot or slow cooker and simmer until everything is as tender as you like it.

For this batch I used the following:

1 tablespoon of extra virgin olive oil
1 small chopped onion
2 cloves of chopped garlic
1 cup chopped celery
1 box of organic vegetable broth
1 vegan "beef" flavor bouillon cube
2 cups of water
1 can of tomato paste
3 potatoes
2 carrots
1 yellow summer squash
1 can of green beans
1 cup of black beans

I just chopped all the veggies, threw them in a pan and simmered them for an hour or so. It was amazing. Pick the vegetables that you and your family enjoy most and have fun experimenting.
