Vegan Corn Chowder
2 cups fresh or frozen corn
½ cup chopped onions
2 potatoes peeled and cubed
1 cup vegetable broth
1 cup soy milk
1 tablespoon vegan margarine (we like Earth Balance)
Salt and pepper to taste
This is super easy to make. Basically, throw corn, onions, potatoes, and broth into a soup pot and simmer for about 15 minutes until the potatoes are soft. Then, stir in the margarine and milk and run a stick blender through this until it’s as smooth as you like it. It’s very yummy! More Recipes

How much is one serving (1c, 1/2 c, etc). This sounds really yummy and I'm doing Weight Watchers and would like to figure out the points value.
