Fruity Macaroons

4 cups flaked coconut
One 14 ounce can sweetened condensed milk
1/2 tsp. almond extract
One 3 ounce package strawberry gelatin, or any fruit flavor

In a large bowl, combine all ingredients. Mix completely. Cover and refrigerate at least 3 hours, or overnight. Preheat oven to 350 degrees. Shape into 1 inch balls and place on well greased baking sheets. Bake 8 to 10 minutes or until lightly browned around edges. Remove, and let cool on baking sheet for 5 minutes, then place on wire racks to cool. They will be soft. These are a lovely pink color and stay round during baking. Experiment with different colors and flavors. Makes 4 dozen.
