Hacienda Casserole

I package of medium tortillas
1 pound Yves veggie ground (or other faux ground beef)
1 small can red chili sauce or enchilada sauce
1 16 oz. can chopped tomatoes
12 oz. monterey jack/colby combination shredded cheese
1 can pinto, kidney, or black beans

Heat veggie ground, beans, chili sauce, and tomatoes in a medium skillet
In a large casserole dish, place a layer of tortillas
Then a layer of bean mixture, and a layer of cheese.
Repeat until you have a few nice layers.
Cook 20-30 minutes in a 350 oven until bubbly and hot.

You can spice this up even more by adding salsa, cumin, chili powder, or hot peppers. Experiment!

Taco Soup

32oz. carton vegetable broth
15 oz. can black beans (drained and rinsed)
11 1/2 oz. jar salsa
11 oz. can Mexican-style corn, drained
8 oz. shredded cheddar cheese, or con queso cheese dip
1 cup tortilla chips, broken in bite size pieces

In a large sauce pan, combine broth, beans, salsa and corn.
Simmer, uncovered for about 5 minutes.
Layer cheese and chips at the bottom of each bowl
Pour hot soup over chips and cheese
Serve with additional tortilla chips, if desired.

Guacamole

1 ripe avacado
The juice of 1 lime
Minced onion or onion powder, or chopped onion to taste
Minced garlic, garlic powder, or chopped garlic to taste
Sour supreme (or sour cream) until desired consistency
Salt and pepper to taste

I don't use exact measurements with gaucamole because everyone likes theirs slightly different. In my home, everything is heavy on the garlic, but some people find that offensive. I also prefer less lime that some people. Experiment and use what your family enjoys.

Cut the avacado in half, remove the pit, and spoon the avacodo into a medium bowl
Mash together the avocado, lime juice, onion, garlic, and sour cream.
Add salt and pepper to taste.
Serve with tortillas.
