Easy Casseroles
Ham and Potato Casserole
1 pound diced ham
3 to 4 medium potatoes
1/2 cup shredded cheddar cheese
salt and pepper to taste
1 can cream of broccoli soup
Peel, and slice the potatoes very thinly.
Butter an overproof casserole dish and
line the bottom with a layer of potatoes.
Top that with ham, then the potatoes again.
The last layer of ham should be put around
the edges so there is a space in the middle.
Fix the soup according to directions with milk,
and heat. Pour on the casserole, shaking
gently shaking so it mixes into the layers. Place
the grated cheese in the middle of the casserole.
Cover with a tent of aluminum foil and bake in a
350 degree oven for 30 minutes. Remove foil
and bake 30 more minutes. You can serve with
green beans, rolls or cornbread.
Chicken Tetrazzini
1/2 cup butter or margarine
1 can cream of mushroom soup
1 can cream of chicken soup
1 4 1/2 ounce jar mushroom pieces, drained
2 cups cubed chicken
4 ounces spaghetti, cooked and drained
1 cup sour cream
1 cup croutons, any flavor, crushed
Parmesan cheese
In a saucepan, melt butter over low heat. Add
soups and mushrooms. Stir until well blended.
(Do not add more liquid) Remove from heat;
add chicken, spaghetti and sour cream. Pour
into a greased 13x9 inch baking pan. Sprinkle
with crushed croutons, then the Parmesan
cheese. Bake uncovered at 350 degrees for
30-35 minutes. Serve with your favorite vegetable,
garlic bread or rolls.
