Fresh Fruit Recipes
Chill out this Summer with these fun fresh fruit recipes.
Fruity Shell Salad

1/2 pound uncooked Medium pasta shells
1 8 oz. container plain yogurt
1/4 cup frozen orange juice, thawed
1 15 ounce can pineapple chunks or fresh
1 large orange, peeled, sectioned and seeded
1 cup seedless red grapes, halved
1 cup seedless green grapes, halved
1 apple, cored and chopped
Prepare shells, and drain. In small bowl blend yogurt and orange juice concentrate. In large bowl, combine other ingredients. Add yogurt mixture, toss to coat. Chill before serving. Toss gently again.
Pear Salad

Dressing:
1/4 cup oil
3 Tbs.. herb or wine vinegar
2 tsp. sugar
1/2 tsp. dried or 1 tsp. fresh chopped oregano
Salad:
2 pears, cored and sliced
1 cucumber, thinly sliced
1 tomato, cut in wedges
4 oz. feta or thin strips of Monterey Jack cheese
Combine dressing ingredients, and add pears only. Spoon dressing to cover. In salad bowl combine vegetables and cheese. Arrange pears on salad. Pour remaining dressing over salad. Makes 4 servings.
Strawberry Parfaits

1 pint fresh strawberries
3 Tbs.. firmly packed light brown sugar
1 Tbs.. granulated sugar
1 cup vanilla yogurt (8 oz.)
1/4 cup sour cream
1/4 tsp. grated orange peel
Combine strawberries and sugars. Mix well. Let stand about 20 minutes for juices and sugars to combine. In a small bowl combine yogurt, sour cream and orange peel. Mix well.
Spoon 1/3 of berries into four parfait glasses, top with 2 Tbs.. of yogurt mixture. Repeat. Spoon last of berry mixture over yogurt, dividing evenly. Do the same with the remaining yogurt mixture. Serve.
