Quick Bread Recipes
Bread:
2 cups flour
1 cup sugar
4 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 cup buttermilk
1/3 cup oil
2 tsp. vanilla
2 eggs
Streusel:
2 tbls. sugar
1 tsp. cinnamon
2 tsp. margarine
1 tsp. crushed nuts (optional)
Heat oven to 350F. Grease and flour bottom only of 9x5, or 8x4 loaf pan.
In large bowl mix all bread ingredients; beat 3 minutes on medium speed.
Pour batter into prepared pan.
In small bowl combine all streusel items until crumbly. Sprinkle over
batter; swirl with butter knife to marble the batter and streusel. Bake
for 45 to 55 minutes or until toothpick comes out clean. Cool 15
minutes, then remove from pan. Slice as soon as possible! Makes 1 loaf.

2 eggs
1 large jar squash, or carrot baby food or two small jars
1 1/2 cups flour
1/2 tsp. baking powder
1 tsp. soda
3/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. cloves
1/3 cup crushed nuts
Cream shortening and sugar until light and fluffy. Add eggs, one at a
time, beating well after each addition. Add squash or carrots. Sift
together flour, baking powder, soda, salt and spices. Add the flour mix
to the squash mix. Stir in nuts. Turn batter into a greased 9x5 pan.
Bake at 350 for about 1 hour until toothpick comes out clean. Makes 1
loaf. (you many substitute 1 tsp. pumpkin pie spice for the cinnamon and
cloves.)
